all of them will defend your planet when you are attacked and also have the possibility of being destroyed if you lose. Battlecruisers are good because they get rapid fire against alot of ships but it is smarter to fleet save

All ships will help in the defense of an attacked planet. However, civilian ships as well as probes and sats have almost zero attack power, so just act as targets. The best ship defense is probably made of cruisers, battle cruisers, and destroyers. Between them they have rapid fire against any attacking ship. Do note that if a death star is attacking, a cruiser can only damage it if your weapons research is 3 levels higher than the attacker's shield research level.
It's generally not a good idea to use ships in defense of a planet though, unless you have a distinct advantage in either power or numbers. If that is the case, the attacker isn't likely to attack anyways. Arme posted a combat report in a different thread where a ship defense was used (enemy fleet returned as the attack occurred, it wasn't intended).
Was there a reason you wanted to use ships of normal defensive structures?

Ships are only good for a debris field for the attacker to pick up
